Bombay Potatoes

Potatoes
Curry paste (mild, madras or byrani are good)
Chopped onion
Oil

Parboil potatoes, then cut into large chunks.

Saute onions in oil briefly, then add curry paste and potatoes.

Stir and cook over medium heat, like home fries.
