Mom's Pumpkin Walnut Pancakes

1 1/2 cups flour or prepared Whole grain pancake mix
1 tsp cinnamon
1/4 tsp nutmeg
1 teaspoons baking powder
2 TBLS dark brown sugar
1/4 cup ground flax seed
Salt optional (not used)
*combine dry ingredients and set aside

Beat an egg,add:
1/2 cup of pumpkin
2 tbs vegetable oil, then
1 cup milk

Mix wet and dry ingredients, add walnuts or pecans to preference

Erika's Apples with Caramel Sauce

Ingredients

  • 4 tart green apples
  • 1/2 cup brown sugar
  • 4 tablespoons butter
  • 2 teaspoons ground cinnamon

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). 
  2. Fill the bottom of the pan with enough water to cover, mix in about a Tbsp. of cornstarch, a tsp. and a half of vanilla, and a small handful of chopped nuts. (Almonds, walnuts, or pecans.)
  3.  Core apples all the way through (I used Jonathan apples) and peel a thin ring of skin off around the middle of each apple so they can "breathe".  
  4. Stuff apples with the brown sugar and butter premixed, and place apples in water mixture.
  5. Place in a shallow baking dish and sprinkle with cinnamon.  
  6. Sprinkle apples and water with nutmeg and a generous (but not overpowering) amount of cinnamon.
  7. Bake at 350 for 20 min. covered with foil and then for another 10 min. uncovered. 
  8. Finally, serve in bowl with the caramel/nut sauce around base of each apple 
Vanilla ice cream in the center drizzled with caramel ice cream topping is another incredible addition to them.
Also, I just used whatever apples I had and used pumpkin pie spice in place of the nutmeg and cinnamon (basically the same thing anyway).
