La Sirena Cocktail (The Mermaid)

We had a version of this at the Round Cantina on Butler Street from their cocktail taps, and loved it. This is my version, because they didn't give me the actual recipe! It's like a souped up Paloma!

4 oz grapefruit juice

2 oz tequila (or less!)

2 oz Aperol

1/2 oz lemon juice

5 cc (1 tsp) agave syrup

Stir and serve over lots of ice.

We did this as a pitcher for a party. Popped it in the fridge to chill and brought it out in an insulated growler for serving. (Chill growler in the freezer night before if you can!)

28 oz grapefruit juice

14 oz tequila (I think 10 oz might be wiser!)

14 oz Aperol

3.5 oz lemon juice

2 - 4 tablespoons Agave syrup

So this makes close to a half gallon, 7 drinks or so.

“Spagliato” Granita

“Spagliato” Granita from "The Tucci Table: Cooking With Family and Friends" by Stanley Tucci, Felicity Blunt. Start reading it for free: https://a.co/dCxrf8T

Serves 6
3.5 ounces prosecco
1.5 ounces Campari
3.5 ounces red vermouth
Juice of 4 oranges
1 tablespoon superfine sugar

Negronis are a favorite cocktail of Felicity’s. This light, bright granita with the added lift of prosecco is something we love to serve after a dinner party. Spagliato means “spoiled,” denoting that it is a Negroni made with prosecco instead of gin. Mix all the ingredients together in a shallow glass dish and put it in the freezer. As it freezes, use a fork to break up the ice crystals that start to form on the edges of the container and move them into the center. Ideally, you want to create a mass of snow-like flakes. It should take 3 to 4 hours in all. Don’t forget about it, but don’t let it dominate your day—as long as you fork it up every half hour or so, all will be well.

Eggnog (Jamie Oliver)

Christian made this for us twice(!) this Christmas!

From Jamie Oliver here.

Ultimate eggnog recipe

Serves 8
  • 3 cups (700ml) whole milk
  • 1 cup (240ml) heavy or double cream
  • 3 cinnamon sticks
  • 1 vanilla bean pod, split and seeds removed
  • 1 teaspoon freshly grated nutmeg, plus more for garnish
  • 5 eggs, separated
  • 2/3 (130g) cup granulated sugar
  • 3/4 cup (175ml) Bacardi Dark Rum, or bourbon
In a saucepan, combine milk, cream, cinnamon, vanilla bean, vanilla seeds, and nutmeg. Bring to the boil over a medium heat. Once boiling, remove from the heat and allow to steep.
In a large bowl or stand mixer, beat egg yolks and sugar until combined and thick ribbons form when the whisk is lifted. Slowly whisk in the milk and continue to mix until the mixture is combined and smooth. Add bourbon or rum, and stir. Refrigerate overnight or for up to 3 days.
Before serving, beat the egg whites in a large bowl or stand mixer until soft peaks form. Gently fold into eggnog until combined.
Serve and garnish with freshly grated nutmeg.
